MOOD-BOARDS Shaak Not Curry

There is a very big history on the word “CURRY” and yes a lot of western people will refer to “Indian Food” as curry, because there is not any other word that could explain what Indian food really is and I am going to explain how it is not curry. India is a land that has history in architecture, wealth and its politics with the British Empire, however it also has a history in its cooking and the various type of cuisines that lives in this vast land. As I have mentioned before that depending what state you live in the food is different and it is “native” to that state. What I mean to say is that, Gujarati food won’t be “native” or known in the state Punjab, and there are many reasons for that, one would be crop, history of influences, from different imperial time and how their crops would’ve effected that part of India. So you see there are so many reasons that “Indian food” or “Curry” is not the definition of Indian cuisines and what you eat in restaurants in the west part of the world known as Indian food is not really “Indian food”. However it is Punjabi food or Lahori food, mainly.

Gujarati food consists of many root based vegetables, pulses, gourds, gram-flour and many more. The main dish will also will be addressed with the main ingredients and followed up with the word shaak, so it would be potatoes and aubergine shaak, or if I said it in my language it would be pronounced as “bateta ane ringnna nu shaak”, (written fanatically).
