Stuffed Aubergine & Potatoes

This is a classic dish in my family that we eat at least once a week in the evening with Chapatis and Kichadi. The stuffing in the aubergines and potatoes is a mixer of spice and coriander. A very filling meal for the evening so we use less potatoes and more aubergines so it is easy to digest.

Ingredients

  • 5-6 baby Aubergines
  • 3-4 Baby Potatoes

Stuffing Ingredients

  • 1 1/2 cup Coriander
  • 1 TBS Chilly powder
  • 1 TBS Coriander powder
  • 1 tsp Turmeric powder
  • 1 1/2 tsp Garam masala powder
  • 2 TBS Oil
  • Salt to taste

Tempering

  • 1/2 TBS Mustered seeds

Making the Sauce

  • Add 2 cups Water once you have stir fried everything
