
This is a classic dish in my family that we eat at least once a week in the evening with Chapatis and Kichadi. The stuffing in the aubergines and potatoes is a mixer of spice and coriander. A very filling meal for the evening so we use less potatoes and more aubergines so it is easy to digest.
Ingredients
- 5-6 baby Aubergines
- 3-4 Baby Potatoes
Stuffing Ingredients
- 1 1/2 cup Coriander
- 1 TBS Chilly powder
- 1 TBS Coriander powder
- 1 tsp Turmeric powder
- 1 1/2 tsp Garam masala powder
- 2 TBS Oil
- Salt to taste
Tempering
- 1/2 TBS Mustered seeds
Making the Sauce
- Add 2 cups Water once you have stir fried everything
