
This dish is a winter dish because of the vegetables. The majority of the green vegetables are seasonal vegetation and you can only get it during the winter period. The dish can be eaten for lunch and dinner. You can eat it on its own or with fried bread called puri. This is a must to have dish in my family during the winter months because of the different types of green beans, bean pods and green plantain. Great source of protein to keep one warm and active.
Ingredients
- 8 Baby potatoes
- 8 Baby aubergines
- 4 Medium sized green plantains
- 2 cups peas
- 2 cups Surti papdi
- 2 cups Valour
- 2 cups Valour beans
- 2 cups Lilva papdi
- 2 cups Lilva beans
Dumplings
- 1 1/2 cups green Methi
- 1 cup Besan
- 1 TBS chilly powder
- 1/2 TBS turmeric powder
- 1/2 TBS garam masala
- Salt to taste
- 1 tsp caraway seeds
Spices to stuff the big vegetables
- 3-4 TBS garlic & chilly powder paste
- 1 TBS turmeric
- 3 TBS coriander powder
- 1 TBS garam masal
- 1 cup coriander
- 2-3 TBS oil
- Salt to taste
Tempering
- 1 cup oil
- 2 TBS mustered seeds
Puri Dough
- 3 cups wheat flour
- 2 TBS besan
- 1/4 TBS chilly powder
- 1/2 TBS turmeric powder
- Salt to taste
- 2 TBS oil
- 1/4-1/2 cup hot water
