
Once the aubergines are cooked on the grill the preparation takes place to turn it into ‘Oro’, you would stir fry the flesh of the aubergines with spices and then enjoyed with rotli and a drink called chass, which is made from yogurt mixed with cold water, with a pinch of salt and coriander powder. I always make my ‘Oro’ on the spicier side. It’s great to be eaten during the winter season, summer or whenever you fancy it.
